Denver Happy Hour @ Trillium

The Co-Host for the Septembers’ Denver Happy Hour is Courtney McRickard, Owner 360 Design. I met Courtney about 6 or 7 years ago through Camille Gerard. We've been friends ever since. She is a hard working (featured in many national magazines) entrepreneur with a hugely successful business in landscape architecture. I just wanted to show her off to you. She is one impressive woman. Trillium is a hot new restaurant in north downtown. There are theories that new downtown is north downtown. You will see a lot of construction and hip restaurants sprouting about in the next couple years.

Courtney McRickard

Courtney is principal at Three Sixty Design, a landscape architecture and urban design firm specializing in sustainable commercial and residential work, from urban infill and mixed-use redevelopment to public parks and residential gardens. Three Sixty Design’s team of landscape architects, designers and construction consultants are involved in all phases of development from analysis and feasibility studies through construction and final walk through. Courtney’s experience has lent to numerous built projects while many have been recognized for awards and featured in regional and national magazines.

Over 100 years old, our space once operated as a “wheel and deal” pawn shop. To maintain the integrity of the structure, we have preserved its post and beam construction, brick wall in the North Dining Room, and the 14 foot ceilings. We have restored the facade, installed an open, exhibition style kitchen, lounge area with see-through linear fireplace, ‘U’ shaped Norwegian Quartz bar, exposed wood beams, and pressed tin ceilings Redesigned in conjunction with Chef Ryan Leinonen, Ethos Architecture, and Starker Construction, Trillium projects a ‘Modern Scandinavian’ meets ‘Warm Americana’ atmosphere that is casual-comfy-cozy-cool. Trillium was conceived to engage the guest in a wonderful dining and social experience. We are proud to be part of the Ballpark Neighborhood’s continued revitalization.

Try a Taste of Scandinavia at Trillium’s Happy Hour

DENVER, June 14, 2012 — Forget Happy Hours filled with weak discounted drinks and conventional bar fare. At Trillium, Happy Hour is both affordable and appetizing - a celebration of modern, Scandinavian-inspired cocktails and cuisine you won’t find anywhere else. Served in the sleek yet cozy Cloud Bar and festive patio, happy hour runs from 5-7 pm weekdays; and Saturdays and Sundays from 5-9 (closed Monday).





Trillium offers a classic Scandinavian smorgasbord, featuring such items as chicken, bacon and mushroom terrine with onion mustard and rieska (a Finnish flatbread); lemon and dill pickled shrimp; truffled Tater Tots with hollandaise; and Portobello “fries” – fresh Portobello mushrooms, cut into steak fry shape, soaked in buttermilk and a batter of flour and cornmeal and then deep-fried. This fresh take on fries is served with Amish Wisconsin Blue Cheese Aioli.





Gazpacho - the perfect summer soup – is also an option and is garnished with a fried cornbread crouton and sour cream.





And what would happy hour be without that legendary Scandinavian spirit, Aquavit? Try Aquavit-cured salmon for size, or perhaps the oysters with ginger Aquavit mignonette. Most smorgasbord items are $4, with a selection of artisan cheeses at $6.





Six options of well spirits at $4 each can be combined to the customer’s preference, and select 20 oz drafts are also priced at $4. Stroh’s lager and your choice of a shot: Vodka, Whiskey, or Aquavit at $6.00





Trillium also offers an array of daily specials Tuesday through Sunday. The line-up includes:

Tuesday: "Shot and a Beer” - A beer and a shot of Vodka, Whiskey, orAquavit at $6Wednesday: “Rum Roulette” – Pick a card, any card. But instead of turning up a queen or an ace, our deck is filled with an array of rum-based cocktails. We’ll make whatever you choose for just $6.Thursday: “Punch Social” - Our crafty mixologists create a new, seasonal, and strong punch every Thursday. $6.Friday: “Oysters and Pearls” – Order our Happy Hour Oysters ($4), and get a free “pairing" of our house champagne.Saturday: Aquavit's Take Flight! Aquavit is a traditional Scandinavian, slightly spicy, herbaceous liquor. Our bartenders "infuse" ours in-house to create exciting new flavors, such as Carrot Cake, Strawberry Black Pepper, & Fig! Try one, or flights of three or five. $4/shot, $7/flight of three, $11/flight of fiveSunday: Happy Hour all night! (5 p.m. to 9 p.m.).





Located at 2134 Larimer St., Trillium is open from 5 p.m. to 10 p.m. Tuesdays through Thursdays, 5 p.m. to 11 p.m. Friday and Saturday and 5 p.m. to 9 p.m. on Sundays. Brunch is served from 10 a.m. to 2 p.m. every Sunday.
